Turkey (or Tofurky) Day is coming!
Did anyone catch the hilarious baking segment on Martha Stewart Living today? Whenever she has her non-cooking banker friend, Jane on, it's so funny. Adding to the fun today was Lorraine Bracco. One year Jane made her own version of Thanksgiving dinner using canned and packaged stuff. Martha was a good sport about it, but you could see her revulsion peeking through. It was priceless!
Every year, since we're here in L.A., we have Thanksgiving dinner at my pal Mindy's home. Everyone brings a dish and my specialty is corn pudding. It's so easy, lowfat and healthy. If you wanna try it here's the recipe:

Easy Corn Casserole

1/4 cup egg substitute (or you can use 1 egg)
1/4 cup margarine, melted
1 small can (9 oz) corn
1 small can (9 oz) creamed corn
1 package Jiffy brand corn muffin mix
1 container (8 oz) plain, fat-free yogurt
cooking spray (Pam or equivalent)

1.Preheat oven to 350 degrees.
2.Combine all ingredients, except spray, in medium-sized mixing bowl. Stir well.
3. Spray 8-inch square baking dish with Pam. Pour batter into prepared pan and bake 45 minutes until set.
